Finally getting the hang of it. I have given up using the Kitchenaid mixer, and just mix/knead by hand. Much easier, and hardly any cleanup. The dough is painful to clean off the mixer.
I have also figured out my oven. Finally. 425° F for 35-40 min. On a baking sheet with a Silpat mat. Put a small loaf pan with hot water in the oven and bake on the second to lowest rack. 20 minutes in, I mist the loaf with a water spray bottle. The method seems to work, more or less, for almost any bread. I would like to try a stone.
